Homemade Healthy Potato Soup without the “packet”


My mom told me she just couldn’t  make her potato soup because she didn’t have her “packet.”  I’m sure it does taste good with the combination of herbs and MSG in those packets, but it’s not the healthiest choice.   Consumers are beginning to realize the importance of NOT buying pre-made ANYTHING as the processed ingredients are detrimental to one’s health.

Furthermore, who likes to be limited by having to make frequent trips to the store for these things?  I know my mom doesn’t, hence this lovely recipe is included here for all to see including her!  I like finding a way to make whatever it is my heart desires with what I have already in stock in our household!  Potato soup shouldn’t be a hard thing to fix, it should be something you can conveniently make anytime you need- it actually strikes me as poor man’s food and very American-Irish style!  So here’s to you mom, you inspired me to actually record the recipe I made for my little family that is far away from you right now.  Homemade Healthy Potato Soup without the packet ;).


1 bag of Golden Organic Potatoes

3/4 stick of butter (find the butter that has no rBST- which is minus that killer hormone)

2 tbs olive oil

2 Tbs organic half and half or creamer

3 garlic cloves sliced

1 large sweet (yellow) onion diced

3-4 pinches of dried parsley

1 drop of dill essential oil

1.5 to 2 (a range here depending on how watery or thick you prefer your soup) of broth (we used turkey broth left over frozen from another time)



Shredded cheese and cut up green onions

OPTIONAL for those who LOVE ham diced ham cubes with 1 half a head of garlic cloves and 1 Tbs of butter

1.) clean up your potatoes and boil them

2.) add sliced garlic, chopped onion, olive oil, butter, salt, half and half,  and parsley to food processer. Process away!  Add one drop of dill and continue to process to mix this in well.

3.) Drain water out from potatoes, cut up to desired size for soup.  Add broth and warm up broth with potatoes.  Add food processer mixture and stir to make a good consistency.

4.) OPTIONAL for HAM OR BACON lovers:  simmer up bacon or ham with 1.5 tablespoons of butter and half a head of garlic on skillet.

5.) Optional toppings: green onions, cheese, and ham.

It’s done.  It was easy.  Enjoy!
